The ultimate date granola

Ah, date granola. A few weeks ago I went to brunch with a friend and got the most delicious skyr with honey-roasted muesli and blackberry jam. I went straight home and made date granola and I have eaten it almost every day as an afternoon snack since.

This date granola. It’s too obvious, but I still have to say it anyways: it’s so good like seriously need more nowwwwww even though I just ate some before I sat down to write this post.

It has a nice healthy base of oats, almonds, and seeds, and then things start to get a tiny bit desserty, if you can handle that, with the addition of honey melted all up into the clusters. And then? Everything gets toasted in oven to a deliciously slightly addictive snack.

Oven or pan?

Homemade muesli can be made both in the oven and on the pan. When it comes to the pan with honey (and sometimes butter), it’s called granola. It’s a little more sticky. In the oven, it gets a little drier, and that’s probably the version I like best. Muesli is super good on top of skyr, ymer or Greek yogurt, and it only gets better and healthier if you add a little fruit and berries. My favorites are fresh figs, blueberries, mangoes and raspberries, but it is only the imagination that sets the limits of what you can use.

Date granola is easy and quick to make, and you have guaranteed the ingredients in the cupboard already. If not, you can just put in what you now have (a scraped but also good version could consist of oatmeal, sunflower seeds, almonds and honey).

Here’s what you need:

Homemade date granola in the oven

4 dl oatmeal
2 tablespoons flaxseed
3 tablespoons chia seeds
2 tablespoons sesame seeds
3 tablespoons sunflower seeds
2 tablespoons pumpkin seeds
1 dl hazelnut kernels
2 dl almonds
3 tablespoons honey (I use acacia, but you can easily use flower honey)
6 large dates
4 figs

Make & Bake:

Chop hazelnuts, dates, figs and almonds.

Mix with the dry and honey and spread on a baking sheet with parchment paper.

Bake in the oven at 150 degrees hot air and stir around a few times over the next 15-20 minutes, until toasted and golden.

Remove from the oven and stir well several times until completely cooled. Otherwise it sticks together.

Fill the date granola into an airtight container. It can last for a few weeks.
